Something Yummy



I had to share the recipe for this main dish salad I made for dinner. Always appreciative of good recipes - especially those low in fat and calories, I thought you might feel the same way. Guys, if you want to wow your wife, or girlfriend, this is easy, and goes great with some crusty french bread and "J" pinot grigio, my current fav, or wine of your choice. Eating this outside makes it taste better. The basis for the recipe came from here:

Mediterranean Potato Salad with Shrimp and Feta

Dressing:
3 Tbl chopped fresh basil
2 Tbl fresh lemon juice
4 tsp extra virgin olive oil
1.5 tsp sugar
1/2 tsp kosher salt
1/2 tsp fresh ground pepper
1/2 tsp Dijon mustard

Salad:
1.5 lbs small red potatoes, quartered
1/2 tsp kosher salt
1/2 tsp fresh ground pepper
1 lb medium shrimp (grilled with olive oil, salt & pepper to taste)
3 Cups thinly sliced romaine lettuce
1 Cup thinly sliced red pepper
1 Cup thinly sliced yellow pepper
1 Cup thinly sliced red onion
1/2 Cup (2 oz) crumbled feta cheese
2 Tbl chopped , pitted kalamata olives
1 Tbl capers (optional)

To prepare dressing, combine first 6 ingredients, stirring well with a whisk.

To prepare salad, place potatoes in a cast iron pot if you have one, mix with some olive oil and salt and pepper, turn on the heat, cover,  and when you hear it start to sizzle add a couple of Tbl of water, replace lid, lower heat, and let steam for about 30 minutes. 

Grill shrimp and let cool.

When potatoes are done, remove lid and let cool. Add shrimp and 1 Tbl of the dressing , mix well. When ready, add all the other ingredients, the rest of the dressing, and serve. Serves four very generously.

We were doing so well until we got to the olives... and honestly, I'm not sure I've ever had capers.

It does otherwise sound and look delicious. :)

Looks absolutely delicious! I've lost my appetite recently...I seriously eat peanut butter sandwiches all the time! But this looks scrumptious and I just want to eat!

this does look yummy... but pity it has raw onion and peppers... ugh! they leave a lot of flavour in whatever dish they're included... I'd caramelise the onions my stir-frying them with the potatoes and find something to replace the peppers with... perhaps zuccini?

and I have to ask... what is kosher salt?! Salt is salt, right? :p

that salad dressing recipe is a lot like the basic recipe a friend (who's a french chef) gave me for vinaigrette (minus the vinager of which you would put 1/3 the amount of olive oil used). Thyme mixes in well with that also.

Hmmm... maybe I'll experiment with that this week! I was planning on making a rice or pasta salad one of these days... why not potato?

don't you love Cooking Light? I think they make the best in the "low cal/fat" meals out there! I have this book but have not tried this wonderful looking salad...after seeing this, I most certainly will and maybe I can get my hubby to prepare it! lololololol...

This will look dalish in about 2 hours. Right now I'm full of a late lunch from Chili's. Do you suppose the potatoes could just be skipped altogether? Fix it without the potatoes and let me know how you like it. I'm kidding, *v* will try this soon. Thanks.

Looks delicious! and would be great for outdoor seating! I make a very simular one for myself with a champagne vinagrette more often than anything!

Turned out pretty well. I burnt the potatoes because I am that talented but they were still use-able.

Ooh! looks delicious... its just that i have no idea what a Dijon mustard is?!?!?!?!...or a romaine lettuce for that matter (i thought there was only one lettuce). But i'll improvise. I'm hungry!

I could definitely "veganize" it and replace the shrimp with tofu, and the feta cheese with shredded veggie feta. It looks so delicious.
I think it's early and I need to eat breakfast, because my mouth is watering. :D

Looks great! I would leave off the shrimp being a vegetarian, but the rest looks YUMMY! I may just try this. I just used capers in my dish last night and it was GOOD! I'll have to use some for this.
