Nutritious Salad


Here is a picture of our dinner last night, thanks to my daughter sharing her variation on this salad. Very low calorie, but delicious. I added a little sugar to the dressing to take the "bite" out of the vinegar. An old trick that my grandmother taught me whenever using acidic ingredients. We had grilled chicken, but you could add just about anything you like, such as shrimp, or just veggie.

Green beans - steamed (about 5 minutes, then rinse in cold water)
Small red potatoes - steamed (left to cool)
Salad greens
Red onion
Hard-boiled egg
Kalamata olives
Capers
Grape tomatoes

Dressing:
3 TBL olive oil
3 TBL apple cider vinegar
1 tsp Dijon mustard
1 tsp garlic - minced
1/2 tsp sugar
salt & pepper to taste (although my daughter hates that I eat too much salt, so this is my addition)

Easy, cool for summer, and very nutritious.

That does look yummy though. I had to laugh about the beans. We have fresh green beans from the garden but can't agree on how to cook them. I like them still a little crisp and deep green. I like to season them with onion and salt.

My F-i-L breaks them into teeny-tiny bits, boils them forever, then pours the water off, refills the pot and boils them again! They're not really green. He puts in chucks of bacon fat too.

yummy, have your tried whole food's raspberry dressing? it's mild, without that bite but still tangy...I will get the name for you if you want...it's fabulous....this all makes me want to make this tomorrow!

Yum yum yum and yum. This looks very French. That is close to my dressing recipe. I use balsamic vinegar, and less of it compared to the olive oil. I haven't tried sugar, but maybe using less vinegar it isn't as biting.

Love dinners like these, I could have this every day. Not only healthy, but doesn't leave you feeling too full and groggy either. Lite meals are great.

I'm sorry you had a bad day on Tuesday. As you know I don't believe I have control over my emotions. I tend to let them have their say while I OMMM and pray and cry and breathe, etc. They do eventually pass like a weather system, but I believe they help me move through things even when they're uncomfortable.

Don't hold them too much at bay, please?

That looks delicious. You can try adding honey if you want to reduce your processed white sugar intake.

BTW - what does drinking a glass of vinegar and water do for you? I've never heard of that.

Instead of meat, I always add beans to my salad. Black beans or cannelloni beans are my favorite. I have to have good dressing though. I am not a vinaigrette kind of girl. Give me some honey mustard!
