Fingerling Potatoes

I thought these potatoes turned out well. I used fingerling potatoes from the farmers market, green pepper, fresh garlic, and leeks. I cut everything lengthwise and sauteed in olive oil. Kosher salt to taste and fresh ground pepper. Just before serving I added about 2tsp of butter for a richer flavor. Easy, and goes well with just about anything.

It's early here, breakfast hours away, but your fingerlings are doing their job of teasing the appetite.

I don't eat potatoes very often, but when I do, these are some of the best ways to eat them. They look just great!

These look and sound very good. I've never had potatoes with leeks before; I'm not sure I've ever had leeks at all.

Yummy!

The other night I grated potatoes and tempeh with flax seeds and onions. I sauteed it in olive oil with a little lemon pepper. It was amazing and chock full of protein!

I ate it on top or raw tomatoes.

I cooked Fingerling Potatoes last night. Roasted them with olive oil, salt and pepper. Tossed some asparagus on the last 15 minutes. Just a little too good.
