Beans & Rice



Slice of Chic posted a recipe for beans and rice that is incredibly good, fast, and easy. Great for a quick meal when you're pressed for time. You can find it here. We had company and they loved it - as did my husband who doesn't always like veggie night. I might add a bit more rice, or figure out a way to use regular brown rice and not Minute Brown Rice, but my husband vetoed that idea and said it was perfect. I used plenty of fresh mozzarella cheese, however. He asked me to copy the recipe for my recipe box, not willing to risk the loss of this recipe, evidently.

What's with men and their beans and rice? She said this was her husband's favorite meal, something his mother made for him. That says it all, I guess. If MOM made it ...

  1. It does sound good and quick. Interesting that the recipe uses both cumin and soy sauce as flavorings.

  2. lakeviewer - I thought so, too, but it worked. I added an extra clove of garlic - which is common practice for me.

  4. MMM.. I like Red River Wild Rice Mix, brown and red rices. Other than that, this recipe sounds perfect.

  7. Great beans and rice recipe! I love brown rice and cook it almost daily. Topped with steamed veggies or beans, and a little cheese, it becomes a complete protein and is very nutritious, as well. Thanks!

  11. I just printed out the recipe. My husband will love it as he loves anything with beans and cheese and a little spice. It sounds delicious. I'm going to make this for dinner tomorrow night. Yummy!

    My noon meal is usually all-vegetable. I'll add this to my list.

  16. In our years of vegetarian eating we have come to love brown rice, and rice and beans and cheese, so thanks for a recipe with all three. I printed it for my husband (the cook) who thinks it looks delicious.

    Back in DC, I loved to eat red beans and rice at a Cajun restaurant, "Louisiana Express" - with a bit of tomato sauce thrown in.

  20. oh, yummy! sounds divine! my daughter just made a wonderful brown rice and chicken dish that was really good - her 4 year old son made the sweet/sour sauce for it [well, with only a little help from yaya!] and while it had a tad much brown sugar [for my liking, but not his], it was really good - will have to grab her recipe - especially great served over brown rice!
